A Family-Run Oyster Farm Tasting Experience in Wexford  

This public food-tasting tour takes place on the Hickey family oyster farm on the Hook Peninsula, part of Ireland’s Ancient East. Hosted by oyster farmer Tommy Hickey, the tour introduces guests to how oysters are grown, harvested, and shaped by tides, seasons, and coastal conditions, while also sharing the story of the Hickey family and their connection to this place. Visitors will learn about the often-forgotten heritage of oysters in Irish coastal life, where oysters were once a common local food and an important part of maritime culture. The tour lasts approximately 1 hour and 20 minutes and concludes with a guided oyster tasting, offering insight into flavour, texture (merroir) and the relationship between place, people, and product on a working Atlantic-influenced farm
